Often described as Western on the outside and Asian on the inside, Will’s passion for the cuisine culture and culinary heritage of this fascinatingly diverse part of the world, is what really defines him and sets him apart as a chef and restaurateur. This award winning chef and restaurateur now brings his incredible talent to Mama San in Hong Kong. Lavishing a collection of Asian flavours on his menu, Will continues to delight diners with an amazing collection of dishes from the South East Asian region. At Café Duvet, the intimate white walled bar with dark timber floor is highlighted by high-gloss, lipstick red stools. Here, you can relax and create your own cocktails and people-watch at the busy D Deck. Café Duvet's bar is overlooks a second, larger raised outdoor space situated in the centre of the Square. This self-contained area, surrounded by tall palms and Jacarandas, is where customers can tuck into one of the seven canopied booths fitted with comfortable blue and red colored day-beds as they enjoy drinks and tapas. The booths are complemented by three huge circular day-bed shaded by sun parasols. 

Shore, where water meets the land, is named after the confluence of its 'onshore' main dining room specialising in prime steaks and the 'offshore' lounge area serving one of the most exciting drinks menus in town. The 10000ft² split-level venue aims to bring nature into a modern interior space. Its 'onshore' main dining room is conceptualised as a natural earth's land and can seat up to 80 persons for banquets and private dining. The 'offshore' lounge, meanwhile, is designed for entertaining and networking, which can accommodate up to 200 guests for private parties with drinks and canapés. The spacious 1800ft² outdoor terrace with comfortable sofas, wooden high tables and booth seating is ideal for alfresco social gatherings, casual lunches and corporate events of up to 200 guests. The lounge and outdoor terrace can be combined into a larger space for grand-scale events of up to 400 persons.
