Shoku uses binchotan, an extremely pure, high-carbon charcoal made from oak because its high density allows it to burn with very little smoke at a steady high heat over long periods so that it locks in the juices of seafood and meats and enhances the natural flavours of the food.
A contemporary take on speakeasies, “I Know John” is a sophisticated, private lounge serving specialty mixologist-created cocktails and a carefully curated menu offering niche wines and whiskeys. Overlooking the famed Wellington Street, the refined, modern-rustic venue holds a 16-foot-long bar built with dark timber wood and illuminated oak blocks, and custom-made leather seats and couches.
