Guests are encouraged to choose from the selection of fresh seafood such as whole scallops, Kinki fish, surf clams, abalone, conch and much more from the display around the grill which is flown in daily from the best suppliers in Japan and then cooked on the grill in front of the diners.
Shoku uses binchotan, an extremely pure, high-carbon charcoal made from oak because its high density allows it to burn with very little smoke at a steady high heat over long periods so that it locks in the juices of seafood and meats and enhances the natural flavours of the food.
