Gaylord's kitchen is headed by Chef Roman Singh, aka The Curry Expert, and has over 20 years' of culinary experience rooted in Delhi. Chef Roman believes in traditional cooking styles with contemporary presentations and his mantra for the perfect dish is finding the right balance spices and fresh herbs. Gaylord's menu features traditional street snacks, tandoori barbecue delicacies, delectable curries like Chicken Makhanwala (boneless pieces of tandoori chicken cooked in smooth butter and tomato sauce), Chicken Tikka Masala (barbecued chicken cooked in a subtle onion and tomato sauce) and Rogan Josh Kashmiri (tender boneless lamb in an onion and red pepper sauce) alongside an assortment of freshly baked roti and naan bread, biryani rice and vegetarian specials.

Hidden in an industrial complex situated on Hong Kong’s Victoria harbourfront, this speakeasy dining room unfolds Chef Myers’ own gastronomic West-meet-East adventures through a duo of 4-course and 6-course French Asian tasting menus. Taking charge in the Indian kitchen is Chef Ravilal Bhandari whose wealth of culinary experience includes 15 years as the Executive Chef at the highly reputable Viceroy of India Restaurant in Hong Kong. Some of chef Bhandari's mouthwatering specialties includes pani poori trio which features crispy puffs stuffed with tangy potatoes paired with a selection of spiced water, mouthwatering morsels of tandoori salmon and lamb dum biryani cooked and served in a sealed pot.
