The event menus are exquisitely designed by Yun Yan's Executive Chef Kenny Chan who is a son of a renowned Sichuan chef family. Besides holding major positions at famous restaurants in Indonesia, Thailand, Singapore and Canada, Chef Chan is granted the honorable title of Chef Rôtisseur by the Chaîne des Rôtisseurs. With endless creativity and over 40 years of experience, he creates modern Sichuan gourmet that embodies the versatility and variety of flavors in Sichuan cuisine. Driving down Ice House Street, one cannot miss FLY's playful "Front Porch", a semi-outdoor area that is embraced by floor-to-ceiling warm timber planks that intertwined with greens, foliage and light reflections from a gold disco ball spinning lazily in the background. "Combined with playful features such as a hopscotch painted on the floorboards, this area sets a mood that is playful, intimate and welcoming for patrons who want to chill and 'play' at the same time," FLY interior designer, Alicia Tan, puts in a nutshell. It preps one for a night of adrenaline-filled partying where a 3500-square feet dance club awaits behind the smoky glass doors.

The "Back Room" is designed such that a clubber's senses would be enhanced through hearing, seeing and feeling of the music; a massive Turbosound system that pumps solid, crisp and powerful sound that can vibrate hair on skin, a jet-black DJ booth that sits amidst a wall-to-wall, floor-to-ceiling LED wall, displaying larger-than-life graphics that are in-sync with the sound and beats of the tunes. Gritty black tiles, raw concrete and mesh screens are dotted with reflective materials to strategically reflect LED graphics, energizing every corner and engulfing clubbers with synchronized visual beats. Other playful features, such as handle-like wall features, a pseudo dancing pole, raised flooring and even tables that could be used as dancing platforms are also key elements to the spatial planning of the room to entice clubbers' interaction with the music and vibe. Graffiti work by famed French graffiti artist, L1ES ONE, on 2 of the back walls act as backdrops to this urban music playground.

Our love of ‘all things burger related’ inspired us to spend years researching what makes the perfect hamburger-meat-to-bun ratios, patty recipes, grind coarseness, Maillard reactions, and cheese meltability to name but a few. Beef & Liberty is the product of that obsession - those technical details are exactly what we are all about. It’s this passion that’s made us want to share our burger addiction with the good people of Hong Kong.

Our name originates in 18th century Britain where the leading members of London society gathered in beefsteak clubs to partake of great food, fine booze and entertaining company. The brilliantly named Sublime Society of Beefsteaks was the most famous of all the clubs and its motto was “Let beef and liberty be my reward”. We loved the line so much we took it as our name.

Townhouse aims to highlight the city feeling. Designer made a perfect marriage, a mix-and-match of the surroundings to the interior design. The restaurant is intended to be obscured as a darkened cinema, leaving all the attention to the twinkling lights of Hong Kong. Townhouse showcases the perfect marriage of Asian food and Western cooking method satisfying everyone’s taste bud and intends providing different innovative delicacies to pleasantly surprise all the epicures in town. Townhouse equally accentuates crafting drinks, especially cocktails, ice tea series & mocktails.
