Gaylord's kitchen is headed by Chef Roman Singh, aka The Curry Expert, and has over 20 years' of culinary experience rooted in Delhi. Chef Roman believes in traditional cooking styles with contemporary presentations and his mantra for the perfect dish is finding the right balance spices and fresh herbs. Gaylord's menu features traditional street snacks, tandoori barbecue delicacies, delectable curries like Chicken Makhanwala (boneless pieces of tandoori chicken cooked in smooth butter and tomato sauce), Chicken Tikka Masala (barbecued chicken cooked in a subtle onion and tomato sauce) and Rogan Josh Kashmiri (tender boneless lamb in an onion and red pepper sauce) alongside an assortment of freshly baked roti and naan bread, biryani rice and vegetarian specials.

Japanese for "fireworks", the dining experience at Hanabi is a burst of seamless, intricate Japanese flavors meshed with a modern flair. Dada Bar + Lounge (Dada), inspired by the Dadaism art movement of the early 20th century, is a living example of contrast and imagination.
